I'm having the same problem. Raspberry Pi 4 Model B Rev 1.2 with Bookworm 64-bit. I do not see a list of resolutions in raspi-config. Switching back to X11 makes VNC not show anything but a grey screen. I've tried a few things, but none of them seem to work.

I have had the same issue when I had to change to X11 to use Teamviewer. It turns out that when you change to X11, it automatically disables VNC. So you will have to manually enable it again in Raspi-Config
