Buster is using 5.15 kernel
Bullseye is using 6.1 kernel
Bookworm is using 6.6 kernel

You can also switch kernel versions using rpi-update
(but obviously you may find features lacking in an older kernel may cause issues if the OS makes use of them).

Or you can build your own kernel with any version you choose.

But it's probably best you explain why you need 5.15 (or older) kernel as there may be better solutions to your problem.
Going back to an ancient kernel, lacking many features we now expect, and without security updates, is not a great solution.
