You would have to wipe everything and install PINN, then reinstall...
But, at the same time I believe that OctoPi is just a set of applications and bits n pieces which are created with the standard Raspberry Pi image building tools (pi-gen). So it might be possible to backup your OctoPi, install Raspberry Pi OS, and then install the applications into it.
