I think it really depends on your use case. I tend to start with either Lite or Base GUI since I have my list of favourite apps that likely are different than others. My use case is general purpose desktop and epub library manager, with a set of apps that I an comfortable with, stretching back to Unix days. My typical build path is start with Lite, add X11, my window manager of choice (MATE), and my applications.

I have a bog "stock" install on a testbox when I want to try things or see where Wayfire and now Labwc has got to. However I have a work flow that I am used to and tend to run that setup on all my Linux GUI systems.

While storage is cheap, and loading up extra apps likely would not have adverse effects, I am a huge fan of KISS.

A retro game box would be totally different build. As would a dev station or an embedded Pi.

What might be interesting is hearing how many download/installs are being done from the Installer and what is the breakdown of the different images, since that would likely reflect the "general" user population. If most are downloading the "with Recommended" maybe there is value to trying to see what the most popular missing packages are. The corporate user base likely runs off custom built images.
