Raspberry Pi OS • remove the added '+' in kernel name

I build a kernel 6.7 release candidate from the rpi-linux 6.7.y branch, but I haven't found a way fix the local version naming; there is always a + added, which leads to problems in various scripts, even the RPiOS bookworm own scripts. Where can I remove that?
And what purpose has this addition actually?
