Go bookworm, it's an easy test.
They delayed Wayland on anything with low memory (1GB and below) I til sometime into bookworm when they moved to labwc and then managed to tweak it enough to work.
Give it a go and see if it suites you.
It is as simple as that.
Bookworm is as mature as it is going to get on the Pi now.
