Raspberry Pi OS • Trying to change the rpi os whole look

I am trying to change the rpi os whole look to something else. I tried with no luck as it doesn't change anything when i hit apply and goes back to default theme and when I tried to install gnome or kde. I loved the look of both but unfortunately as soon as I install them and reboot the realvnc doesn't work anymore and I get gray screen. I really wish to customize my rpi os to suits my needs and comfort. So any suggestion on how I can do that in the simplest way without breaking realvnc?

I own rpi 5 16gbs
