There were changes in initramfs tools config, things might be missing in newly generated initrd.
Or maybe you forgot to set LV to auto-activate, happened to me in the past when I (re)constructed volumes manually.
Long time ago I took the easy and lazy way and booted with Opensuse where YaST can all do the work for you. You only need to decide on which storage/block device(s) and size(s) essentially. Also crypto layer is added quite easily.
