I can't offer full detailed instructions on this (I'm more of a firefox guy really) but a useful starting point might be to look at our rpi-chromium-mods package, which is installed by default on raspberry pi os desktop (alongside chromium itself). You can run `dpkg -L rpi-chromium-mods` to see what's inside: it installs /etc/chromium/master_preferences and /etc/chromium.d/00-rpi-vars, the former preinstalls some extensions (adblock and youtube h264ify). I presume (but don't actually know) that you can just add more files in /etc/chromium.d to add your own customisations.
