I think you consider using the file
in which you can associate mime types and file extensions to applications
You can also use right clicks on files in pcmanfm and "open with..." feature. All changes will be made to this file above (on a user profile).
See /usr/share/applications/mimeinfo.cache for global settings (but I think it's not recommended to modify this one)
