I believe that it is some or all of the ones listed in the main menu under Preferences -> Recommended Software

Some of them may have been tweaked to work better with PI OS. For example installing Libreoffice that way doesn't give you what you get (but may not want) from apt install libreoffice. That may apply to applications that you yourself want.
