I have looked for this too... Vainly...
Settings for the Desktop environnement in RaspiOS are spread all over the system, some in the user's folder, some at the system wide level. And as so many things with RaspiOS unfortunately, it is not documented at all.
The co-existence of Wayland/labwc with X11 makes it even more complex to understand which settings file are used (depending on the compositor selected).
Furthermore some Desktop settings depend on PCmanFM while other are managed with labwc or Qt or just CSS. And ControlCentre only covers a tiny fraction of the potential settings available.
Very difficult and time consuming to figure out what is what !
If you really need a more polished Desktop environnement with a clear and simple to use Preferences Manager, KDE Plasma runs extremely well on RPI5 on top of RaspiOS (Lite or Desktop)
