Hey, I'm sorry if maybe I should have left this thread alone and let Bosse_B's last response be the conclusion.
I read this thread in preparation for what he was trying to do, take a "headless" Pi to another place with a different WiFi network.
With one of the tools mentioned here, nmtui, it worked beautifully with no further messing around in any config files. Didn't know about that tool either, thank you very much.

This is just to report: yes, it should totally work without having to configure anything. I added the network using nmtui and the Pi automatically connected to it. SSID with spaces and having to manually quote them in the generated config file, that might be something to watch out for, I have not tried that myself.
The autoconnect priority you mentioned last, Bosse_B, in my mind doesn't seem to relate to this situation. As you said previously, if the Pi only ever has one of the networks to choose from at a time, what would a priority setting do.
