Raspberry Pi OS • Bookworm Headless - Adding a second WiFi while away

I am liking most of the features of Bookworm, and have recently started using it for my headless configurations. Everything works great using the Pi Imager program and setting the network configurations for startup. However, I have run into a problem, because I use a Pi4 as a portable Pi Hole while traveling.

The problem I ran into is, previously I accessed /etc/wpa_supplicant/wpa_supplicant and made an entry for the location where I was staying / or working. With Bookworm I read that it now uses a file in /etc/NetowrkManager/system-connections. Not a problem, I thought. I used the nmtui to make a .nmconnection file (but I did this at home). The program creates a UUID number that seems to be a coded number of some sort. I presume it is for the current system settings. Anyway, this is where I ran into problems.

I wanted to set up the connection, when I reach my destination, but to do that both devices need to be on the same network in order to establish an SSH login. The headless device doesn't know the IP of the new location and so can't get connected. Is there a way to perform the operation by directly accessing the root device on the SD card? or am I out of luck.
